Llaqtapata, or “High City,” rests on the slopes of Apu Choqesafra in the Peruvian Andes, overlooking the Choqesafra glacier. The landscape is dramatic and quiet, with cold mountain air that slows the ripening of the cherries and gives the fruit more time to build sweetness on the tree. That long, steady maturation shows up clearly in the cup, bringing balance, depth, and a natural sweetness that feels complete.
The land has been in Gilber Huayllas Huaman’s family for generations. His father, Feliciano Huayllas, passed it on to him with the hope that he would continue the family’s work. Gilber learned the craft side by side with his father, absorbing not only technical skill but a deep respect for the land. That respect is also tied to his Incan heritage and a sense of responsibility to care for this place well.
The soils here are volcanic, rich in minerals, and organic matter. They give the coffee structure and energy without heaviness, allowing the flavors to feel both vibrant and precise. Over the past seven years, the farm has been carefully developed with a focus on quality at every step, from cultivation to processing.
The coffee world has taken notice. Since 2023, Gilber has placed in Peru’s Cup of Excellence competition, earning third place in 2025. His coffees stand out for their clarity, sweetness, and careful execution.
