
Finca Calamar, Colombia
Finca Calamar lies in the municipality of Paicol, tucked deep and high up in the Andes mountains of western Huila. The processing of coffee by farmer Gildardo Lopez Hoyos from cherry to green beans is experimental, and in our opinion, highly successful. Cherries are fermented for 30 hours, followed by fermentation of the extracted beans. The result is a complex, harmonized festival of sweet, nuanced flavors.
