Finca Calamar, Colombia
Finca Calamar lies in the municipality of Paicol, tucked deep and high up in the Andes mountains of western Huila. Farmer Gildardo Lopez Hoyos' processing of cherry to green coffee is experimental, and in our opinion, highly successful. A hyrid of natural and washed processes, cherries are fermented for 30 hours, followed by a fermentation of the extracted beans. The final cup is complex with notes of pineapple, raspberry, and jasmine - a harmonious festival of sweet flavors!
