Jardines del Eden, or Garden of Eden, is a farm that specializes in exotic coffee varieties and experimental processing methods. This particular lot underwent anaerobic fermentation, where the cherries were sealed in a water-filled tank for 30 hours. After fermentation, the cherries were dried in temperature-controlled conditions, resulting in flavors of candied grape, blueberry, and blackberry.
