Gitwe Hill, Burundi

For the first time in our history, we couldn't resist buying a honey processed lot. The beans are dried with their inner fruit intact, minus their skins, producing a honey-like layer that develops additional extrinsic notes through the slow fermentation process. The result is a combination of juicy dark cherry and grape, with a sweet plum finish.

Adjoining the dense forests of Kibira National Park, small farmers in the area of Gitwe Hill deliver ripe cherries to the Heza washing station which they built with Long Miles Coffee. The Bourbon variety grown here may be an ancestor of Kenya's great SL28.
