Panibaj, perched above beautiful Lake Atitlan, is a village serving small farms. The coffee produced here is grown under shade trees that are resilient to cold temperatures. Coffee beans are fermented, washed and soaked in pristine water for 12 to 24 hours all by hand, resulting in bright accents of cherry, milk chocolate, and a hint of orange blossom.
