ABOUT OUR ROASTER'S CHOICE FOR FEBRUARY

George Howell Coffee has been buying Mamuto since 2006. It has never faltered. The late Walter Mathagu always produced coffees that were perfectly ripe and sweet. They ranged from excellent to exquisite as weather patterns challenged but never overcame him. His son, Patrick Mathagu, is now runs this great farm. 

Mamuto AB Medium roast is excellent as a drip coffee, but we especially enjoy it as an espresso. If you're looking for an roast that diverges from the classic Italian-style espresso, we suggest giving Mamuto AB Medium a chance! Enjoy notes of plum, berry, and dark chocolate.

Mamuto grows beneath the slopes of the usually overcast seventeen thousand-plus foot Mt. Kenya, looming above to the north. The soil is deep red-orange in a lush green very gently undulating landscape. All the coffee is processed at the farm right through drying. After drying, the coffee remains in parchment approximately six weeks resting in aerated bins before being transported for final milling and packaging. Besides coffee the Mathagus maintain a herd of dairy cattle and grow bananas, maize, beans and macadamia on their 21 acre farm.

Walter Paul Mathagu was an agricultural officer serving the government of Kenya for seventeen years before retiring in 1987. During that entire time Mrs. Mathagu managed the farm. Taking inspiration from their family, Mr. Mathagu explained that “Mamuto” means “father, mother, and children.” He and his wife named the farm by combining the first two letters from three words: his name, Mathagu, as the father; Muthoni, his wife’s maiden name, as mother; and toto, meaning child or children in Swahili: thus Mamuto. Mr. and Mrs. Mathagu have six children - three boys, three girls. We continue to buy Mamuto’s entire crop.

Mamuto AB is one grade below AA but doesn’t falter on flavor. There is less uniformity in bean size, but notes of plum and ripe blackberry still resonate throughout the cup.

Coffees range from countries all over the globe from Kenya to Costa Rica. The price remains the same each month and does not vary based on the coffee of the month.

Light: Our light roast coffees are roasted delicately to highlight the terroir from their native countries. George has likened a perfect light roast to landing a plane on a matchstick–An extremely challenging task to nail completely. Roasting is always a balancing act in maintaining the right amount of acidity without under-developing a coffee, or otherwise going a touch too far and eliminating its nuanced flavors. The result should be a lively and multi-dimensional coffee, packed with bright, yet smooth acidity, florals and fruit that pop, and ever morphing tasting notes that last from hot to cool.

Medium: Our medium roast coffees have mild acidity while providing a richer overall body. These coffees are typically roasted longer and developed further than our light roasts, producing flavors that lean more heavily toward chocolate and nuts at their core while still providing mellow accents like flowers, fruit, and citrus. The mild acidity in our medium roast coffees lends itself well to creating a bright yet rounded espresso shot, with discernible terroir notes.

Espresso: Our espresso roasts are catered towards those who enjoy an Italian-style shot or one with a bright, round body. These coffees are roasted the longest and developed furthest for greater caramelization and an inherent dark chocolate flavor. The bittersweet chocolate and depth of body can stand up to the addition of milk and sugar and work well in espresso-based cocktails. The minimal acidity present in these coffees makes them preferable for an evening after-dinner espresso!
